Fermented Herring

Fermented Herring.

Anyone tried it. My regular restaurant chef asked if I would like to try some from a batch he has at home. Hell bring some in next time I do dinner.

Is it real Swedish fart or Dutch young herring?
We used to ferment herring ourselves in wooden barrels, called seledka, that is half way between Swedish (8 months) and Dutch (few days).
If he got it in Australia ask where from, I'd like to get it too.

BTW, did you try forshmak when in Odessa? It is minced fermented herring with apple and herbs, Odessa used to be famous for it.

No. My meals were basic stock military food. Mostly canned. My mattress was on boxes of tin food. I just didn't have the time or energy for anything exquisitely Ukrainian. I honestly don't know what I was eating. The 'rat meat' joke lasted about a week. Nothing worse than eating fancy food like a spoiled, in front of people serving and only getting basic military grub so to speak. But it was good basic food though. They had lots of chocolate bar donations to nibble on, which was good.

Stuff that Herring!!!

I've got a caste iron stomach that I thought I could eat anything, like it always has. But I'm finally defeated. :gup
It smelled like my old Sydney sewer job and the taste was just bile after a hard night. Much to the amusement of the other tables and the Chef who put me to the challenge with the promise I get my dinner for free if I was a good boy and finished it all or pay double for his trouble. I paid double. :oops:

I'm sorry Tallo. He wouldn't share his 'secret Chef business's details about his fermented herring.

It smelled so bad, the other tables took notice and stopped eating theirs to stare at my dare. Comments of "Even an Indian wouldn't dare" and a woman speaking loud "For God's sake give him a double whiskey" among laughter.

Never again. I would rather chew my foot off. :lol:
