potato curry with peas

Post by Jovial Monk » Sun Jan 04, 2009 7:14 pm

This is a really nice vegetarian curry to go with a nice Indian meat curry (or by itself with perhaps rice if you are demented enough to be a vegetarian)

for about 4 serves (or for 8 if part of bigger curry meal)
500g new potatoes
250g fresh peas
400g onion/shallot
400g tomatoes or can tomatoes (Italian not fucking Chinese!)
2tbsp ghee or butter
2tsp tumeric (v healthy shit, tumeric)
chili flakes, don't be shy about these, chili is good, helps you sleep & loaded with antioxidants
2 cups chicken stock
1 tsp garam masala
lemon juice & salt

Heat ghee & fry onions till soft, add tomatoes, potatoes, etc exept peas, g.m. & salt.

bring back to a boil, boil 15 mins or so, cover & simmer 15 min, add peas and simmer until spuds are cooked.
Stir in g.m. squeeze lemon & some salt, cook another minute

Ensure spuds & peas are cooked, of course b4 serving

Now be nice Tom.

Darwin has it's fair share of crocadiles already.
