125g full cream evaporated milk
1/4 cup SR flour
1 tsp cardamom powder (buy fresh)
30g ghee
5tbsp cream
oil for deepfrying

Syrup
250g sugar
3-4 cardamom pods
1 tbsp rose water

Put powdered milk, flour, card. powder & ghee into a bowl, rub mixture until it resembles breadcrumbs then gradually add the cream to make a soft dough. Take pieces of dough and form 24 walnut-sized balls.

Make the syrup.
Put sugar, water and card. pods into a (smallish) frypan, bring to the boil and boil uncovered for 15 mins, turn heat down and let simmer gently.
deepfry the g.j. balls in oil at low temps (pref thermostatically controlled deep fryer.)
They will sink first but will rise again, fry till they are a nice light golden brown drain on kitchen paper--all oil must be removed off surface of the ball, and put into the syrup. When all in bring syrup back to a boil, lower heat slightly and continue cooking for another 30-40 minutes. the balls will swell up and become soft and spongy. Turn heat off and add the rose water to the syrup.

Excellent- thanks hebe- I like Gulub jamuns. Well i love vegetarian indian food generally.

Bought a thermostatically controlled deepfryer today. Tomorrow I will cook a nice Indian beef curry and some sort of veg curry (maybe just simply heat a fry pan, add some panch phorum massala (dried cumin, fennel etc seeds) let them pop then stirfry some chinese cabbage and some finely shredded chili) and cook gulab jamuns for desert!
