Pre-packaged rump can go grey at the bottom -
I would take it back too.
I think they spray preservative on it to stop that?

I had a mate who's father was a chef a world renown chef.

He left a side of meat to hang until it had a green tinge to its skin.
Then he would cut it into steaks, cut off the green and cook it rare.

It was the best, most tender steak I have ever eaten.

Chicken, however he never used unless it was a frozen chook.
because they are frozen immediately after slaughter.
And he felt that chook went off far too quickly.

Fish was purchased from the fish market as soon as the boats came in and were cooked that day.
Any left over were tossed away.

No one ever got sick from his food.....ever

I buy most of my meat at the supermarket (Woolies here is better than Coles for meat) but I do buy some things from the butcher.

Yes - if someone knows what they are doing then beef can be aged.

Fresh seafood is my favorite.

The largest supermarket close to me is Coles so that's where I go.
You never know how long meat has been sitting there at the butcher shop.
A cat will solve the problem - they won't eat off meat.
If that cat eats it then you can cook and eat it.

If a butcher sells off meat he/she won't stay in business for long, word gets around, and if the meat is off you'd smell it.
