Next time you're in Sydney, Bobby.

We have good steak in Melbourne too.
Unfortunately the best cuts of all are sold privately to the top restaurants.

But don't you have any wholesalers open to the public?

At the https://meatemporium.com.au/ you put on a jacket, pick a big lump of meat and the butchers trim it to your licking.

I went to a clients BBQ a few months ago, he had $250/kg wagyu, as much as you could stuff into your face. It's nice, but it also is just too rich, like eating butter. I have teeth, I can chew steak. I prefer good grass fed steak.

I only ever had a small piece of Wagyu.
It was very nice indeed.

For all other steaks:
I like a 300 gram steak cooked so it's still pink in the middle.
It must be seared at high temperature on the outside.
I like mushroom sauce with a steak.

I just ordered a 10 oz. sirloin steak cooked "medium" (pink center) with a loaded baked potato and green beans for $21.99 + gratuity. I'll end up paying about $30 for my meal. I'm at the Salt Grass Steakhouse in Houston TX.

280 gram steak - yes - that's a nice size.
I hope it was tender and tasty?

It was perfect. I don't eat like this all the time, but it's my comfort food when I travel alone for work and get a per diem for meals. I wish I knew how to attach a photo from my phone.

Good on you.
You're making me hungry.

Attaching a photo is a little tricky as there are size restrictions - 800 pixels wide.
