You can cook chicken or any other meat in mustard sauce.
Adding mustard to meat acts as a binder, tenderizer, and flavor enhancer.

Dijon is nice and mild.
but I personally prefer hot mustard and I like to mix it myself adding herbs.
It is also used in folk medicine against colds, back pain and to relieve tired muscles.

I asked Google AI:
do they have mild mustard in Russia like Dijon mustard?
Yes, mild and imported or locally made Dijon-style mustards are available in Russia.
• Dijon Mustard Availability: Dijon mustard (горчица дижонская) is sold in Russian grocery stores, supermarkets, and restaurants (including imported brands and local adaptations).
• Traditional Russian Mustard (Gorchitsa): Traditional Russian mustard is very sharp and spicy because it is made from brown or Sarepta mustard seeds and vinegar, rather than the smoother wine-based profile of Dijon. The Russian word gorchitsa comes from gorit' (to burn).
• Mild Alternatives: Aside from Dijon, stores in Russia also carry milder options such as grainy mustard (зерновая горчица) and sweet or mild European-style table mustards.
